Our Filet of Sirloin is cut from the most tender part of the Top Sirloin. It looks and tastes like Filet Mignon, yet is firmer with a bit more marbling. If you enjoy the delicate flavor of a Filet yet long for a better chew, this is your cut.
We love to coat ours with extra virgin olive oil and then rub on Montreal steak seasoning. It's up to you - spice it a lot or a little. We then sprinkle it with some smoked paprika. We sear it at high heat on all sides on the flat iron and then put it on the grill or in the oven and finish it to medium rare. Serve while still hot with a drab of melted butter and chives on top. Delish!
