We cook our pork steaks (and chops) very much like we do our beef steaks. We love them grilled. Sear them at high heat to seal the flesh on both sides and then reduce heat and cook until they are on the medium side of rare. Pay close attention as you cook. Naturally pure pork fat of the highest quality, like ours, will flare up in a heartbeat. We turn off the burner on the grill directly beneath the meat, grab a beverage and watch the meat finish just to be sure. Let the meat rest a few minutes, then serve.
