Rub with spices and/or marinate. Also great to brine, marinate and/or rub with your favorite spices and then cook low and slow in your smoker.
Resting is crucial: Allow the roast to rest, loosely covered with foil, for 15-20 minutes after cooking. This allows the juices to redistribute, preventing a dry roast.
Always slice the meat across the grain to ensure tender pieces.
