Long overlooked as a premium cut, Skirt steak has come into its own as one of the most moist, flavorful and versatile cuts of beef.  It's also lean, healthy and delicious.  It has become a favorite of professional chefs (always has been in other parts of the world) and home cooks, alike.

Skirt steak is usually brined or marinated and then cooked medium rare, sliced thin and served as part of another dish.  Perfect for tacos, fajita and salads it also can be sliced thin and served in a sandwich.  

We have to admit that we love beef so much as the main course that we occasionally do a "backwards brine", which is immerse the whole cut in a brine solution - 2 parts black PEPPER (hence the "backwards") to 1 part salt - let the meat brine overnight and then slice cloves of garlic into small spears that are inserted into the the flank streak  We then sprinkle generously with smoked paprika and roast it until it is medium rare (135°).  We let it rest for 10 minutes covered with foil.  Slice thin across the grain and serve as the main dish. Oh My!!!
