Whether this steak is sprinkled/rubbed with spices and oil, brined or marinated - it cooks perfectly on the grill, a flat-iron or under a broiler.  Our favorite way to prepare this cut is to sear in a cast iron skillet then grill to medium rare, let rest (10 mins.) and slice thinly across the grain and serve.
